Shymkent is the gastronomic capital of Kazakhstan — and has been for centuries. Sitting at the crossroads of Kazakh and Uzbek culinary traditions, the city produces what many consider the best plov, samsa and shashlik in the country. The reason is geography: Shymkent sits just 120 km north of Tashkent, and Uzbek cooking has blended seamlessly into local food culture here in a way that hasn't happened anywhere else in Kazakhstan. Dedicated plov restaurants called oshxona cook in massive cast-iron kazans over open wood fires. The chaikhana (tea house) culture is stronger here than in Almaty or Astana. Food is a social event — generous portions, low prices, and the kind of hospitality that keeps you at the table for hours.

Geographically, the city sits at 506 m above sea level at the foothills of the Ugam Mountains — one of the oldest continuously inhabited cities in Central Asia, founded on the ancient trade route between Samarkand and Taraz.

People. One of Kazakhstan's most diverse cities: the population is predominantly Kazakh (~65%), with a significant Uzbek community (~20%) — the legacy of centuries of proximity to Uzbekistan — plus Russians, Koreans, Ukrainians and 15 other nationalities. This ethnic mix is one reason the food is so good: Uzbek plov, Korean kimchi and Kazakh beshbarmak coexist in the same bazaar.

Economy. Shymkent anchors the south of Kazakhstan. The main industries are oil refining (the city refinery processes 6 million tonnes annually), lead and zinc smelting, petrochemicals, and a rapidly expanding services sector. GDP grew 11% in 2025. The city was elevated to city of republican significance in 2018 — the same status as Almaty and Astana.
